Frankie's Guest Kitchen: Paul Hammer of Savoir Adore makes Sesame Tuna

Welcome to the first Frankie’s Guest Kitchen! We’ve been wanting to have our friends on for a while & the opportunity presented itself when Paul Hammer of Savoir Adore was in Nashville a couple of weeks ago to work on some fun stuff with Ron. I (Blair) am mildly obsessed with Paul’s band, but he knows this, so I like to think that it’s not creepy that I wear the band sweatshirt around the house when he’s staying here. After the recipe, I’ll link to some muuuuuusic to check out while you’re cookin’!

SERVES 4

INGREDIENTS:

2 lbs fresh tuna (two large steaks or 3-4 small steaks)

For Tuna Marinade:

1 cup low sodium soy sauce
1 tablespoon tahini
1/2 cup orange juice
2 tablespoons sugar
1 tablespoon grated fresh ginger
1 tablespoon sesame oil
1 tablespoon mirin or rice vinegar
4 cloves minced garlic

For sauce:

1/2 cup tahini
2 tablespoons sugar
3 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon fresh minced ginger
1 clove garlic, minced
1 teaspoon red pepper chili flakes or hot sesame oil to taste

Vegetables (can sub in or out whatever you want here!)

2 Red Peppers
4 Scallion or Green Onions
2 Shaved Carrots
2 Cucumbers - sliced with a peeler or cut into very thin slices

12 oz of Udon or Soba noodles

Black and/or white sesame seeds

EQUIPMENT NEEDED:

1 cast iron pan or cast iron griddle - we use these

1 mixing bowl

DIRECTIONS:

  1. Combine ingredients for marinade & marinate the tuna for 2 hours

  2. Cook 12 oz of noodles in boiling water according to instructions on package. Immediately rinse noodles in cold water to stop cooking

  3. In a bowl, whisk together all ingredients for sauce.

  4. Mix all cut veggies in mixing bowl & spoon sauce over them & mix. Add as much sauce as you want depending on taste, but reserve some to top the tuna with at the end.

  5. Remove tuna steaks from marinade and pat dry

  6. On a flat plate combine white sesame seeds and black sesame seeds and coat both sides of the steaks

  7. In a cast iron skillet or grilltop griddle heat 1 tablespoon canola oil until smoking hot.

  8. Place tuna steaks on pan and cook for 2 minutes. Then flip and cook for 2 more minutes as well as side searing to make sure all the edges of the steak are cooked. Remove from pan and let rest for 5 minutes

  9. Thinly slice the tuna and place over a bed of the noodles & veggies. Drizzle remainder of sauce over tuna steak and enjoy!
